Pumpkin Corn Muffins

 

1 ¼ cups flour

1 cup yellow corn meal

1/3 cup granulated sugar

4 tsp. baking powder

½ tsp. salt

2 eggs

1 ¼ cups pure pumpkin

1/3 cup milk

¼ cup oil

 

 

 

1.     Preheat oven to 375.

2.     Grease 12 muffin cups

3.     Combine flour, cornmeal, sugar, baking powder and salt in large bowl.

4.     Beat eggs, pumpkin, milk and oil in medium bowl until combined.

5.     Add to flour mixture, mix thoroughly.

6.     Spoon batter into muffin cups

7.     Bake for 25 to 30 minutes or until wooden pick inserted in center comes out clean.
